I was craving some potato salad when I decided to make thisSouthern Cauliflower Potato Salad version.

Ya'll I can't tell you how much this salad truly tastes like the original Southern Potato salad... It is freakin' AWESOME!!!

And guess what?!? It is ridiculously low in carbs!

Raw cauliflower has very little flavor. It just takes on the dressing you slather it in.

Therefore, when you mix it in my potato salad dressing mix, cauliflower potato salad tastes just like the real stuff.

Steps

Follow these easy directions to make cauliflower potato salad:

  1. Cut cauliflower into bite size pieces.
  2. Add chopped onions.
  3. In a small mixing bowl, mix mayonnaise, mustard, dill pickle relish, and celery salt.
  4. Add dressing mix to cauliflower and stir until all of the cauliflower pieces are equally covered.
  5. Chop boiled eggs. Mix in eggs to cauliflower potato salad. Salt and pepper to taste.
  6. Mix in chives.
  7. You can serve immediately, but it is best to cover and refrigerate an hour before serving to allow the flavors to fully build.

I am not on a low carb diet. I gave up that train years ago. But I do watch my carbs. I try to keep it all balanced.

Ingredients

  • 1 head cauliflower
  • 4 eggs boiled
  • ½ cup onion chopped
  • 2 tbs chives chopped
  • ½ teaspoon celery salt
  • 2 tbs dill pickle relish
  • 1 tbs mustard
  • 1 cup mayonnaise
  • salt and pepper to taste

Instructions

  • Cut 1 head of cauliflower into bite size pieces.

  • Add ½ cup chopped onions.

  • In a small mixing bowl, mix 1 cup mayonnaise, 1 tbs mustard, 2 tbs dill pickle relish, and ½ teaspoon celery salt to make dressing.
